How to Brew Matcha Tea

Prepare your matcha powder green tea using traditional Japanese methods for the best flavour and texture. Discover a more in-depth Matcha Brewing Guide

Usucha (Thin Matcha)

  • 1.5 to 2g (¼ to ½ teaspoons) matcha powder
  • 75ml water at 60 to 70°C
  • Whisk briskly until light foam forms

Koicha (Thick Matcha)

  • 3.5 to 4g (¾ to 1 teaspoon) matcha powder
  • 40ml water at 60 to 70°C
  • Whisk slowly for a dense, velvety texture

Sift the powder before whisking for a smoother finish and use a bamboo whisk to achieve a fine, even foam.

Potential Health Benefits of Matcha

Organic matcha is widely recognised for its rich nutritional profile. Because you consume the entire tea leaf, matcha green tea benefits include a higher concentration of antioxidants such as catechins (EGCG), along with amino acids and chlorophyll.

Matcha also contains naturally occurring caffeine paired with L‑theanine, which supports calm focus, sustained energy and mental clarity. This makes organic matcha powder an excellent alternative for those seeking steady energy without the sharp spikes of coffee.

Origin and Craftsmanship

Our organic matcha is cultivated in Mie Prefecture, Japan, a region with over 800 years of tea‑growing heritage. The tea plants are shaded prior to harvest to enhance sweetness and chlorophyll content, then carefully processed and stone‑ground by skilled artisans.

This meticulous process ensures a best matcha green tea experience, preserving colour, flavour and nutritional integrity while honouring traditional Japanese craftsmanship.

Region

Ise Bay, Mie Pref, Japan

Located in the southeast of Japan, Ise Bay in Mie Prefecture fronts the Philippine Sea, showcasing a varied elevation from sea level to 64 meters. Characterised by a humid subtropical climate, the bay experiences distinct seasonal changes. Summers here are brief yet warm, with temperatures ranging from 21°C to 30°C, transitioning into cooler autumns and winters where temperatures can drop to between 4°C and 13°C. Spring gradually warms the region, setting the stage for another warm summer.

The bay’s weather pattern is predominantly cloudy or overcast, contributing to consistent, albeit varying, levels of rainfall throughout the year. Summer months witness significant cloud cover and the highest rainfall, amplifying the humidity to98%, which starkly contrasts with the drier air seen in late autumn and winter. Wind patterns also vary seasonally, with cool, strong gales typical throughout the year, becoming gentler during the summer months. The bay, enriched by the waters from the Kiso Three, Nikko, and Honai rivers, supports a rich marine life, famed for its fish and seaweed. On its southernmost tip lies the Ise-Shima National Park, a biodiversity hotspot that provides sanctuary to species such as loggerhead turtles and native plants like hibiscus and spider lily, making Ise Bay not just a scenic wonder but also an ecological treasure.

    Was buying this matcha regularly

Loved this matcha and was buying it regularly (1kg pack). One thing that really disappointed me is the price (nearly £200 in a year ?) strange. Won’t be buying again. I understand it’s high quality but still the price increase doesn’t justify that. You can find same grade matcha from other suppliers much cheaper.

    Hello, Katarzyna

Thank you for your loyalty and for sharing your feedback with us. We're glad to hear you've enjoyed the quality of our Matcha.

We completely understand your frustration regarding the price increase. To provide some context, the global demand for authentic Japanese Matcha has surged, while traditional production methods and limited harvest yields remain fixed. Recently, our suppliers increased their costs, in some cases by up to 100%.

Rather than compromising on the grade of Matcha or switching to lower-quality sources, we made the difficult decision to adjust our pricing. This ensures we can continue to support our long-standing growers and deliver the premium quality you expect.

We truly value your past support and hope you might consider us again in the future should your needs change.

    Many Thanks,
    The Tea Makers of London

Premium organic matcha that tastes simply amazing. The flavour is creamy, has a fresh note of grass but very subtle and pleasant on the palate.

    smooth, high-quality matcha

This is a delicious, smooth, high-quality matcha. I make it the traditional way, with a bamboo whisk in a bowl, and have it as a treat on weekend mornings. I like it just with water (I make a froth and then top it up with hot water, a bit like one might make an americano with espresso). While the package says to heat the water to 80 degrees, I usually heat it to 70 as I find this gives me the best results. My only complaint is the package itself--the caddy contains a small foil bag with the matcha inside and I find it a little bit clumsy to get out, but that might just be me.
